Cheddar Apple Melt

October 28, 2009

Inaugural post, whoo! And what better way to start off my blogging career than with one of the ultimate comfort foods? In my book, there are few things better than a grilled cheese sandwich – except maybe a grilled cheese sandwich for breakfast, or a grilled cheese sandwich paired with delicious, seasonal fruit… or both! The Cheddar Apple Melt I threw together this morning is so quick and easy to make, but that doesn’t make it any less delicious!

Cheddar Apple Melt Ingredients:

It’s so simple, actually, that you really don’t need a recipe or quantities – just slice up an apple, assemble on the English muffin (chow down any extra slices, obviously), and layer the cheese on top. I popped my muffin-wich into the oven at 350° until the cheese got ooey-gooey, then sat down and enjoyed!

You can go with a number of cheese/fruit combinations, really. Pear with Fontina sounds pretty amazing, as does apple and Brie… yum! That being said, the extra-sharp cheddar melded perfectly with the nutty whole grain English muffin, while the Granny Smith’s sweet-and-sour combo brought in the perfect, flavorful pop to every bite.
